Refreshing Japanese Green Tea Powder

Made from medium-grade Sencha, this finely powdered Japanese green tea has a refreshing, clean flavour with a gentle touch of astringency.

Versatile and easy to use, it can be enjoyed as a tea drink or incorporated into baking and desserts. Add it to cakes, cookies, pastries, or other recipes for a distinctive Japanese green tea flavour.

Sencha Madeleine Recipe

Makes 8 Madeleines

Ingredients

  • 75g butter, melted
  • 70g egg
  • 72g sugar
  • 65g cake flour
  • 3g baking powder
  • 10g Sencha powder

Instructions

  1. Mix the dry ingredients
    In a bowl, combine the cake flour, baking powder, Sencha powder, and sugar.
  2. Add the wet ingredients
    Add the eggs and melted butter to the dry ingredients.
  3. Mix
    Mix until the batter is smooth and well combined.
  4. Preheat the oven
    Preheat the oven to 230°C (446°F).
  5. Fill the Madeleine mould
    Transfer the batter to a piping bag. Pipe the batter into the Madeleine moulds, filling each cavity to approximately 80% full.
  6. Bake at 230°C
    Bake for 5 minutes at 230°C (446°F).
  7. Reduce to 190°C
    Lower the oven temperature to 190°C (374°F) and bake for another 5 minutes.
  8. Reduce to 170°C
    Lower the temperature to 170°C (338°F) and bake for a final 3 minutes, or until the Madeleines are fully baked and lightly golden.
